they sure know how to cook on Holbox......

we had lots of time for.....
lunch....
it's the annatto seed paste that makes the chicken red......
we loved the street pollo.....
fresh pasta with fresh lobster......
lobster on the beach.....
chicken tacos......
the best coconut shrimp ever,... made with fresh, grated coconut and a passion fruit sauce......

our daily guacamole with home made chips and lots of habanero sauces.....

tacos again..... lots of hot sauces.....
he didn't start cooking until 8 p.m. They eat late!
this was a family affair....after they were all set up, grandma would arrive to start cooking.....
Oh, the eating was good on Isla Holbox....The fish couldn't have been fresher, the lobster tastier, the chicken more organic, and the tacos and guacamole more authentic....From street food to gourmet dining....we always had a delicious meal. They sure know how to cook......(oh ya, it was probably cheaper eating out on Holbox  than cooking at home!)

Everything looks muy deliscioso, muy sabroso. Wow, if there's more.....email me first so I can get a grip cuz I've got a serious case of vacation envy. The Olde Bagg Linda

I so would have loved to taste all of that. Is that in Mexico? Around Texas and OK, we get what they call Tex-Mex which looks nothing like those dishes. Occasionally, we can find Pacific coast Mexican food, which has much more fish.
